Chocolate Peppermint Pu-erh meets everyone's favorite childhood treat - brownies. These brownies get loaded up with peppermint candies and mint-chocolate Milano cookies but get creative and add your favorite chocolatey, pepperminty treats to make them your own.
Loaded Chocolate Peppermint Pu-erh Brownies
Ingredients
- ¾ cup unsalted butterÂ
- 2 sachets Chocolate Peppermint Pu-erhÂ
- ¾ cup cocoa powderÂ
- 2 tsp vanilla extractÂ
- 1 ¾ cup light brown sugarÂ
- 3 large eggsÂ
- ¾ cup all-purpose flourÂ
- Pinch of saltÂ
- Bag of peppermint cookies (We used peppermint and chocolate Milano cookies, but use any chocolate and/or peppermint treat here)Â
- 1/3 cup shattered peppermint candy Â
Directions
- Preheat the oven to 350 degrees and line an 8-inch square baking dish with parchment paper with a one-inch overhang on each side. Spray the whole pan with cooking spray and set aside.Â
- In a medium bowl, microwave the butter until melted. Add in the tea from the sachets and whisk for around 30 seconds to release the flavor into the butter. Whisk in the cocoa powder and vanilla extract and set aside.Â
- In the bowl of a stand mixer, add the brown sugar and eggs. Using a whisk attachment, whip for 3-5 minutes on medium/high speed until the mixture becomes pale and almost doubles in size. Turn on low and slowly stream in the chocolate mixture.Â
- Add in the flour and pinch of salt and fold just until combined.Â
- Pour into the prepared pan and top with crunched cookies and shattered peppermint candies.Â
- Bake for 20-25 minutes, until the center looks set.Â
- Let cool for at least a few hours before serving.Â
