The irresistible treat of the holidays of yore. Filled with Silent Night-infused caramel, even the man with all the toys will be coming back for seconds.
Silent Night Linzer Cookies
Ingredients
- 12 tbsp unsalted butter, room temperature
- ½ cup sugar
- 1 egg plus 1 egg yolk
- 2 teaspoon vanilla extract
- 1 2/3 cup all-purpose flour
- ¾ cup almond flour
- ¼ tsp salt
- 1 tsp cinnamon
- One bag of caramel squares (11 oz)
- 2 sachets of Silent Night
- 1/3 cup cream
Directions
- For the dough, in a medium bowl with a hand mixer or in a standing mixer, combine the softened butter and sugar. Beat for about 3 minutes. Add in the egg and egg yolk and beat to combine. Add in the rest of the dry ingredients. Mix until you no longer see any flour.
- Place the dough in plastic wrap and chill in the fridge for one hour and up to 24.
- Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
- Generously flour a clean working surface and roll out the dough to ¼ inch thick. Cut out cookies with a 1 ½ inch cookie cutter and place on the prepared cookie sheet. Once all the dough has been shaped, take a ½ inch star cookie cutter and cut out a star in the middle
of half of the cookies. You can either bake those stars as extra cookies or roll them out again to make more Linzer cookies. - Bake in the preheated oven for 10-12 minutes. Just before turning golden brown. Let cool while making the caramel.
- For the caramel filing, brew the Silent Night sachets in 1/3 cup of hot water to package directions. If you would like a stronger flavor, muddle one sachet of Silent Night and set aside.
- In a medium saucepan, add the caramels and two tablespoons of the brewed tea. If using the whole tea, add the muddled leaves and two tablespoons of water.
- Place over medium heat, stirring constantly until melted and bubbly. Add in the whole cream and mix over the heat for 30 more seconds. Remove from the heat and let cool for about 5 minutes before assembling.
- To assemble, swipe a little of the caramel at the top of a whole cookie. Then add about 2 teaspoons worth of caramel as a dollop in the middle. Take a cookie with the star cut out and sandwich on top so that the caramel fills into the star shape. Continue this until all the cookies are filled. Let sit at room temperature for about an hour to set before serving.
