This tea-infused take on the classic Mojito combines the tropical flavors of Pineapple Green with mint, lime and rum for a sun-soaked sipper made for the beach. Sunhats and SPF not included. For a zero-proof version, omit the rum and top up with sparkling water.

Pineapple Green Mojito

Ingredients

  • 2 oz white rum
  • 1 oz Pineapple Green Simple syrup* 
  • 5-6 mint leaves, expressed and torn
  • 1 lime
  • Splash of sparkling water 
  • Lots of ice 

Directions

  1. Add simple syrup* and mint leaves to a collins glass, muddle together until lime juice is expressed and mint is fragrant.
  2. Add rum and stir together.
  3. Fill glass with ice, then top with sparkling water and give a quick stir. Garnish with lime and mint.
  4. Enjoy.

*Pineapple Green Simple Syrup

Directions

  1. Bring spring or freshly drawn filtered water to 185°F and pour 2 cups over sachet.
  2. Steep 3 minutes.
  3. Discard sachet and add 2 cups of sugar. Stir to combine.
  4. Let cool.
  5. Date and refrigerate for up to 1 week.
